Preparation

Ingredients

  1. Add water to the rice in a pot and cover. Bring to a boil over high heat. When it starts boiling, set heat to low and cook for 15 minutes. Let cool.
  2. Mix the rest of the ingredients together with the rice. Add salt and pepper to taste, and serve.

  • 1 cucumber, thinly sliced
  • 3 tomatoes, diced
  • 4 cup mint leaves
  • 1/2 cup sliced black olives
  • 3 tablespoons lime juice
  • 4 tablespoons olive oil
  • 1 cup of rice
  • 2 cups water or chicken stock
